Valentines Pancakes- raspberry and white chocolate chip

This is just a really quick and simple recipe for raspberry and white chocolate pancakes! They would be great for valentines, pancake day or any special occasion.

These pancakes are great on their own as scotch pancakes or you can customise them as I have! I found the basic recipe  and haven’t used another one since. It is fool proof and the results are great!

Ingredients: 

  • 50g caster sugar
  • 100g self raising flour
  • 1 egg
  • splash of milk

Optional:

  • 50g white chocolate chips
  • 50g raspberries
  • 50g caster sugar

1. Mix all the ingredients into a bowl apart from the milk. Don’t worry it will be lumpy! I did made it straight in a jug for convenience.

2. Gradually add a bit of milk until the mixture becomes smoother. You shouldn’t need too much, the mixture should resemble thick double cream. Mix in your chocolate chips

3. Heat some butter in a pan on a medium heat. Pour a large spoonful into the pan and cook on one side until bubbles appear. Flip and cook on the other side.

4. Meanwhile have the raspberries, 50g sugar and a splash of water gently bubbling on a medium heat, this is will serve as a sauce.

5. Keep making pancakes until you have used all the batter, stack as you go.

6. Pour over the raspberries and serve with a few more chocolate chips!

This recipe made the stack in the pictures, a big single portion. Multiply accordingly!
